My Renaissance Fritto Misto is a celebration of flavors and textures that will transport you back in time to the golden age of art.

In a large mixing bowl, combine 150g of all-purpose flour, 50g of cornstarch, 1 tsp of baking powder, and a pinch of salt. Slowly pour in 200ml of sparkling water while whisking constantly until a smooth batter forms. Set the batter aside to rest for 30 minutes.

Meanwhile, prepare your ingredients for frying. Slice 1 large eggplant into thin rounds, 1 zucchini into matchsticks, and 1 red bell pepper into strips. Dredge the vegetables in a mixture of 50g of cornmeal and 50g of breadcrumbs to coat evenly.

Heat oil in a deep fryer or large saucepan to 180°C. Dip the coated vegetables into the batter, allowing any excess to drip off, and carefully lower them into the hot oil. Fry in batches until golden and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.

In a small saucepan, combine 100ml of balsamic vinegar, 2 tbsp of honey, and a pinch of salt. Simmer over low heat until thickened and syrupy, about 5-7 minutes.

To serve, arrange the crispy fried vegetables on a platter and drizzle with the balsamic glaze. Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese.
