Mexican-Inspired Stuffed Bell Peppers

I’m excited to share one of my favorite recipes for Mexican-inspired stuffed bell peppers. Today’s dish is perfect for a cozy dinner at home with loved ones or a festive gathering with friends. These flavorful peppers are a unique twist on a classic dish, and I can’t wait for you to try them!

Ingredients:

  • 4 large bell peppers
  • 400g ground turkey
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup salsa
  • 1 cup shredded cheese
  • Salt and pepper to taste

To start, preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. In a skillet over medium heat, cook the ground turkey until browned. Add the cooked quinoa, black beans, corn, cumin, chili powder, and salsa. Season with salt and pepper to taste.

Stuff each bell pepper with the turkey and quinoa mixture, then place them in an oven-safe dish. Top each pepper with shredded cheese. Cover the dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once the peppers are cooked through, remove them from the oven and let them cool slightly before serving. The cheesy topping should be golden and bubbly, creating a delicious aroma that will fill your kitchen.
