Today, I’m excited to share a unique and flavorful dish that combines the sweetness of pineapple with a spicy kick. This Spicy Pineapple Fried Rice is perfect for those days when you want to spice things up in the kitchen. The burst of flavors in every bite will surely leave you wanting more!

Ingredients:

  • cooked rice (preferably day-old) – 300g
  • pineapple chunks – 150g
  • bell pepper (diced) – 100g
  • red chili (finely chopped) – 1
  • onion (sliced) – 1
  • garlic (minced) – 2 cloves
  • ginger (minced) – 1 tsp
  • soy sauce – 2 tbsp
  • chili sauce – 1 tbsp
  • vegetable oil – 2 tbsp
  • salt and pepper to taste

Kitchen Tools:

  • wok
  • chopping board
  • knife
  • spatula
  • measuring spoons

To start, heat vegetable oil in a wok over medium heat. Add minced garlic and ginger, and sauté until fragrant. Toss in sliced onions and red chili, cooking until the onions are translucent.

Next, add diced bell pepper and pineapple chunks, stirring to combine. Let the ingredients cook for a few minutes until the bell pepper is slightly tender and the pineapple caramelizes.

Now, push the ingredients to one side of the wok and add the cooked rice to the empty space. Drizzle soy sauce and chili sauce over the rice, then mix everything together, ensuring the sauces are evenly distributed.

Season the fried rice with salt and pepper to taste, adjusting the seasoning as needed. Keep stirring the rice mixture until it’s well-combined and heated through.

Once everything is cooked and seasoned to perfection, remove the wok from heat and transfer the Spicy Pineapple Fried Rice to a serving dish. Garnish with some fresh cilantro or green onions for a pop of color and freshness.
