As the weather warms up and the days get longer, I can’t help but crave something decadent and refreshing for dessert. This stunning dessert is perfect for a special occasion or whenever you want to treat yourself to something truly extraordinary.

For this recipe, you’ll need the following ingredients:

  • 300g dark chocolate
  • 200g milk chocolate
  • 100g white chocolate
  • 600ml heavy cream
  • 100g sugar
  • 4 eggs
  • 10g gelatin
  • 50ml water
  • Fresh raspberries for garnish

To create this masterpiece, you’ll need the following kitchen tools:

  • saucepan

  • mixing bowls
  • hand mixer
  • ramekins
  • piping bag

Start by melting the dark, milk, and white chocolate separately over a double boiler. In a saucepan, heat up 300ml of heavy cream until it simmers, then pour it over the dark chocolate, stirring until smooth. Repeat this process with the milk and white chocolate.

In a separate bowl, whip 300ml of heavy cream until stiff peaks form. In another bowl, beat the eggs and sugar together until pale and fluffy. Dissolve the gelatin in water and let it sit for a few minutes before adding it to the egg mixture.

Gently fold the whipped cream into each chocolate mixture until well combined. Layer the dark chocolate mousse at the bottom of your ramekins, followed by the milk chocolate mousse, and finally the white chocolate mousse on top. Chill in the fridge for at least 4 hours to set.

Once set, carefully remove the mousse towers from the ramekins and stack them on top of each other to create a triple chocolate tower. Pipe some whipped cream on top and garnish with fresh raspberries.
