Fall Comfort Food: Roasted Butternut Squash Pasta

I love sharing comforting dishes during the fall season, and today’s recipe is a unique twist on a classic pasta dish that is sure to warm your soul. This Roasted Butternut Squash Pasta combines the sweetness of roasted butternut squash with the savory goodness of parmesan cheese and fresh sage. It’s a delicious and hearty meal that is perfect for cozy nights in.

Ingredients:

  • 1 medium butternut squash (about 700g)
  • 300g pasta
  • 2 tbsp ghee
  • 10 fresh sage leaves
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil
  • salt and pepper

  • skillet

Start by preheating your oven to 400°F (200°C). Place the cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 25-30 minutes until the squash is tender and slightly caramelized.

In the meantime, cook the pasta according to package instructions in a pot of salted water until al dente. Reserve a cup of pasta water before draining.

In a skillet, melt the ghee over medium heat. Add the fresh sage leaves and cook until fragrant, about 1-2 minutes. Remove the sage leaves and set aside.

Add the roasted butternut squash to the skillet with the ghee, then add the cooked pasta and half of the reserved pasta water. Toss everything together until well combined, adding more pasta water if needed to loosen the sauce.

Stir in the grated parmesan cheese and season with salt and pepper to taste. Crumble the reserved sage leaves on top of the pasta for an extra burst of flavor.

Serve the Roasted Butternut Squash Pasta hot, garnished with more parmesan cheese and a drizzle of olive oil. Enjoy the comforting flavors of fall in every bite!
