The combination of savory sausage, sweet apples, and earthy quinoa creates a truly unique and delicious meal that will warm you from the inside out.

Ingredients:

  • 2 medium acorn squash
  • 200g Italian sausage
  • 100g quinoa
  • 1 large apple, diced
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 50g pecans, chopped
  • 50g dried cranberries
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • to taste

  • wooden spoon

To start, preheat your oven to 375°F (190°C). Cut the acorn squash in half and scoop out the seeds. Place the squash halves cut-side down on a baking sheet and roast them in the oven for about 30 minutes, or until they are tender.

Meanwhile, cook the quinoa according to the package instructions. In a saute pan, cook the Italian sausage until browned, then add the chopped onion, garlic, diced apple, pecans, and cranberries. Cook until the onions are translucent and the apples are tender. Season with cinnamon, salt, and pepper.

Once the quinoa and sausage mixture are cooked, combine them in a bowl. Stir in the butter and maple syrup until everything is well mixed. Remove the acorn squash from the oven and flip them over. Fill each squash half with the quinoa and sausage mixture.

Return the stuffed squash to the oven and bake for an additional 15-20 minutes, or until everything is heated through and the flavors have melded together.
