Greetings, foodies! Today, I want to share with you a unique and flavorful recipe for Curried Quinoa Stuffed Peppers. This dish is perfect for those looking to add a twist to their usual stuffed pepper recipe. The warm and aromatic flavors of the curry blend perfectly with the hearty quinoa, creating a filling and satisfying meal. Let’s get cooking!

Ingredients:

  • 3 large red bell peppers
  • 1 cup of quinoa
  • 2 cups of vegetable broth
  • 2 tablespoons of curry powder
  • 1/2 cup of coconut milk
  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of raisins
  • 1/4 cup of chopped cashews
  • Salt and pepper to taste

Start by preheating your oven to 375°F (190°C). Cut the tops off the red bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.

In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the quinoa is cooked.

In a separate saucepan, heat the coconut milk over medium heat. Add the curry powder and stir until fragrant. Add the cooked quinoa, chickpeas, raisins, and cashews to the curry mixture. Season with salt and pepper, and stir to combine.

Spoon the quinoa mixture into the hollowed-out red bell peppers. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once cooked, remove the foil and bake for an additional 5-10 minutes to lightly brown the tops of the peppers. Serve hot and enjoy the aromatic flavors of the curried quinoa stuffed peppers!
