Today’s Special: Exotic Quinoa Bites

Hey there, foodies! Today, I am excited to share with you a unique and flavorful recipe for Exotic Quinoa Bites. I was inspired to create this dish after a recent trip to a spice market where I discovered a blend of exotic spices that I knew would be perfect for a healthy snack. These little bites are packed full of nutrients and are perfect for satisfying those mid-day cravings in a delicious way.

To start, you will need the following ingredients:

  • quinoa (200g, cooked)
  • chickpea flour (50g)
  • dried goji berries (30g, soaked)
  • pistachios (40g, chopped)
  • figs (50g, chopped)
  • sumac (1 tsp)
  • cinnamon (1/2 tsp)
  • cumin (1/2 tsp)
  • salt (to taste)
  • olive oil (2 tbsp)

For this recipe, you will need the following kitchen tools:

  • mixing bowl
  • baking sheet
  • oven

Start by preheating your oven to 180°C (350°F) and lining a baking sheet with parchment paper. In a mixing bowl, combine the cooked quinoa, chickpea flour, soaked goji berries, chopped pistachios, chopped figs, sumac, cinnamon, cumin, salt, and olive oil. Mix everything well until the ingredients are evenly distributed.

Using your hands, shape the quinoa mixture into small bite-sized balls and place them on the prepared baking sheet. Flatten each ball slightly to form a disc shape. Bake in the preheated oven for 20-25 minutes, or until the quinoa bites are crisp on the outside.

Once cooked, allow the quinoa bites to cool slightly before serving. These Exotic Quinoa Bites are the perfect healthy snack to enjoy on the go or as a mid-day treat. They are full of unique flavors and textures that will leave your taste buds wanting more.

The total weight of the cooked dish is approximately 400g, with about 10 servings. Each serving weighs around 40g, with an estimated calorie count of 150 per serving.

**Tip:** For an extra burst of flavor, try adding a sprinkle of za’atar spice blend to the quinoa mixture before baking. It will give the bites an even more exotic twist!

I hope you give these Exotic Quinoa Bites a try and enjoy them as much as I do. Feel free to get creative with the ingredients and make this recipe your own. Happy snacking!
