As the warm summer days approach, I find myself craving fresh, vibrant dishes that celebrate the bounty of the season. Today, I’m excited to share with you my latest creation – a Summer Harvest Pasta that combines the best of summer produce with a unique twist.

To start, gather the following ingredients: 200g of ripe cherry tomatoes, 150g of sweet corn kernels, 100g of sugar snap peas, 1 zucchini (150g), 1 lemon, 2 cloves of garlic, 200g of pasta of your choice, 1/4 cup of fresh basil leaves, 50g of feta cheese, and olive oil, salt, and pepper to taste.

For this recipe, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • pot

Start by slicing the cherry tomatoes in half, chopping the zucchini into bite-sized pieces, and mincing the garlic. In a large skillet, heat some olive oil over medium heat and sauté the garlic until fragrant. Add the cherry tomatoes, zucchini, sweet corn, and sugar snap peas to the skillet, cooking until the vegetables are tender.

While the vegetables are cooking, bring a pot of salted water to a boil and cook the pasta according to the package instructions. Once cooked, drain the pasta and set aside.

Zest the lemon and squeeze the juice into the skillet with the vegetables. Add the cooked pasta to the skillet, tossing everything together to combine. Season with salt and pepper to taste.

To serve, top the pasta with fresh basil leaves and crumbled feta cheese. The combination of fresh vegetables, tangy lemon, and creamy feta cheese creates a dish that is bursting with flavor and perfect for a summer evening.
