Today’s Unique Dish: Miso-Glazed Eggplant with Black Bean Salsa

I’m excited to share a new recipe with you today that combines the rich umami flavors of miso with the freshness of a zesty black bean salsa. This dish is perfect for a summer evening when you want something light yet satisfying.

Ingredients:

  • 2 medium eggplants (about 500g)
  • 3 tablespoons white miso paste
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • Juice of 1 lime
  • Salt and pepper to taste

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Cut the eggplants into thick slices, around 1-inch thick, and place them on the prepared baking sheet.

In a small bowl, whisk together the white miso paste, honey, and sesame oil until well combined. Brush the miso glaze onto both sides of the eggplant slices, ensuring they are evenly coated. Pop them in the oven and roast for about 20-25 minutes, until the eggplant is tender and slightly caramelized.

While the eggplant is roasting, prepare the black bean salsa. In a mixing bowl, combine the drained and rinsed black beans, diced red bell pepper, finely chopped red onion, and lime juice. Season with salt and pepper to taste and mix well.

Once the eggplant is done, remove it from the oven and let it cool slightly. Serve the miso-glazed eggplant with a generous spoonful of the zesty black bean salsa on top. The combination of savory miso and tangy salsa is a match made in flavor heaven.
