Today, I’m excited to share a unique and flavorful vegetarian recipe that’s perfect for a cozy night in or a festive gathering with friends. This Vegetarian Fiesta Casserole combines unexpected ingredients to create a dish that will tantalize your taste buds and leave you craving more.

Ingredients:

  • black beans (400g)
  • quinoa (200g)
  • sweet potatoes, cubed (300g)
  • corn kernels (150g)
  • bell peppers, diced (200g)
  • salsa (1 cup)
  • cheddar cheese, grated (150g)
  • avocado, sliced (1)
  • lime, juiced (1)
  • fresh cilantro, chopped (a handful)
  • salt and pepper to taste

Start by preheating your oven to 375°F (190°C). In a pot, cook quinoa according to package instructions. In the meantime, roast sweet potato cubes in the oven until they are tender and slightly caramelized.

Once the quinoa and sweet potatoes are ready, mix them in a large bowl with black beans, corn, diced bell peppers, and salsa. Season the mixture with salt and pepper to taste.

Transfer the mixture to a greased baking dish and top it with grated cheddar cheese. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

While the casserole is baking, prepare the avocado topping by mixing sliced avocado with lime juice and chopped cilantro.

Once the casserole is cooked, remove it from the oven and let it cool slightly. Serve each portion with a generous dollop of the avocado topping on top.

This Vegetarian Fiesta Casserole weighs approximately 1200g and serves 6 people. Each serving has around 300 calories.
