The Inspiration

Today, I am excited to share with you a unique and flavorful dish that was inspired by my recent trip to a spice market. The vibrant colors and exotic aromas swept me off my feet, and I couldn’t wait to introduce these bold flavors into my cooking. This dish is perfect for a cozy night in or a casual dinner party with friends.

Ingredients

  • 1 dragon fruit with pink skin
  • 2 fresh lemongrass stalks
  • 100g shelled pistachios

Kitchen Tools

  • food processor
  • strainer
  • chef’s knife

Preparation

I start by peeling the dragon fruit and cutting it into chunks, removing any seeds if necessary. Next, I finely chop the lemongrass stalks and set them aside. In a food processor, I pulse the shelled pistachios until they reach a fine consistency, which will add a nice crunch to the dish.

In a mixing bowl, I combine the dragon fruit chunks, chopped lemongrass, and crushed pistachios. I gently mix everything together to ensure all the flavors meld well. Finally, I strain the mixture to remove any excess liquid that may dilute the flavors.

Tips

For an extra kick, you can add a dash of cayenne pepper or a squeeze of lime juice to the mixture!

Serving

This refreshing and exotic dish weighs approximately 400g once prepared, making it perfect for 4 servings. Each serving is around 100g and is approximately 150 calories.
