Fall Comfort Food: Creamy Mushroom and Pumpkin Risotto

Growing up, fall was always my favorite season. The cool, crisp air, the beautiful changing leaves, and of course, the comforting aroma of hearty dishes cooking in the kitchen. Today, I’m excited to share with you my unique take on a classic comfort food – Creamy Mushroom and Pumpkin Risotto.

To begin, gather the following ingredients:

  • 200g Arborio rice
  • 150g pumpkin puree
  • 100g button mushrooms, sliced
  • 800ml chicken or vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 50ml white wine
  • 50g grated Parmesan cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

You will also need the following kitchen tools:

  • large skillet
  • wooden spoon
  • sharp knife
  • grater
  • measuring cups

Start by heating the olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the onion and garlic, cooking until translucent. Next, add the sliced mushrooms and cook until they begin to brown.

Add the Arborio rice to the skillet, stirring to coat the grains in the oil and butter mixture. Pour in the white wine and cook until it has been absorbed by the rice.

Begin adding the chicken or vegetable broth, one ladleful at a time, stirring continuously. Allow each ladleful of broth to be absorbed before adding the next. Continue this process until the rice is cooked al dente and has a creamy texture, about 20-25 minutes.

Once the rice is cooked, stir in the pumpkin puree and grated Parmesan cheese. Season with salt and pepper to taste. Finish off the risotto by stirring in the remaining butter to create a rich and creamy finish.

Serve the Creamy Mushroom and Pumpkin Risotto hot, garnished with fresh parsley for a pop of color and freshness.
