Today, I’m excited to share a unique fusion recipe that combines Asian and Mexican flavors in a delicious and creative way. These miso-glazed tofu tacos are perfect for a light and flavorful meal that will satisfy your taste buds. Whether you’re looking for a meatless Monday option or just want to try something different, these tacos are sure to impress!

Ingredients:

  • 200g firm tofu, diced
  • 30g miso paste
  • 15ml soy sauce
  • 15ml honey
  • 4 corn tortillas
  • 1 avocado, sliced
  • 100g pickled red cabbage
  • a handful of fresh cilantro, chopped

Kitchen Tools:

  • baking sheet
  • mixing bowl
  • frying pan

Start by preheating your oven to 200°C. In a mixing bowl, combine the miso paste, soy sauce, and honey to make the marinade. Add the diced tofu to the bowl and toss until well coated. Place the marinated tofu on a baking sheet and bake for 20-25 minutes, or until golden and crispy.

While the tofu is baking, heat a frying pan over medium heat. Warm the corn tortillas for about 30 seconds on each side until they are pliable. Assemble the tacos by placing a spoonful of the roasted miso tofu on each tortilla. Top with sliced avocado, pickled red cabbage, and fresh cilantro.

Serve the miso-glazed tofu tacos warm and enjoy the unique combination of flavors and textures in every bite!
