Greetings, foodies! Today, I’m excited to share one of my favorite unique recipes that never fails to bring a taste of summer to any meal. These Coconut Lime Shrimp Tacos are bursting with fresh flavors and vibrant colors, making them the perfect dish for a casual gathering or a relaxing dinner at home.

To start, gather the following ingredients:

  • 400g shrimp, peeled and deveined
  • 200ml coconut milk
  • 1 lime, juiced and zested
  • 2 cloves of garlic, minced
  • 1 jalapeno, finely chopped
  • 100g red cabbage, thinly sliced
  • 1 ripe avocado, diced
  • A handful of fresh cilantro, chopped
  • 4 small tortillas
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Before you begin, make sure you have the following kitchen tools on hand:

  • skillet
  • mixing bowl
  • sharp knife
  • cutting board
  • citrus juicer

Start by marinating the shrimp in a mixture of coconut milk, lime juice, lime zest, minced garlic, and chopped jalapeno. Let the shrimp soak up all the flavors for at least 30 minutes.

While the shrimp marinates, prepare the toppings. Toss the thinly sliced red cabbage with a drizzle of olive oil, lime juice, salt, and pepper. Dice the ripe avocado and chop the fresh cilantro.

Heat a skillet over medium heat and cook the marinated shrimp for 2-3 minutes on each side, until they are pink and cooked through.

Warm the tortillas in the skillet for a few seconds on each side until they are soft and pliable.
