Welcome, foodies! Today I’m excited to share with you a unique and flavorful recipe that’s perfect for a light lunch or snack. I was inspired to create this dish after craving something crunchy yet creamy, and the combination of quinoa and avocado did not disappoint. Let’s dive into this delicious and satisfying recipe together!

Ingredients:

  • quinoa (100g)
  • avocado (1 large)
  • cherry tomatoes (50g)
  • feta cheese (30g)
  • fresh cilantro (10g)
  • olive oil (15ml)
  • lime (1)
  • salt (to taste)
  • pepper (to taste)

  • bowl

To start, cook the quinoa according to package instructions in a saucepan and let it cool. Then, cut the avocado in half and remove the pit. Scoop out some of the flesh to create a hollow space in each half. Dice the cherry tomatoes, crumble the feta cheese, and finely chop the fresh cilantro.

In a bowl, combine the cooked quinoa, diced tomatoes, crumbled feta cheese, and chopped cilantro. Drizzle with olive oil and squeeze the juice of a lime over the mixture. Season with salt and pepper, then mix everything together until well combined.

Spoon the quinoa mixture into the hollowed-out avocado halves, packing it in tightly. Feel free to top it off with extra feta or cilantro if desired. The contrast of the creamy avocado with the crispy quinoa filling is simply irresistible!
