Today, I am excited to share with you a dessert recipe that combines unexpected flavors in a delightful and surprising way. This dish was inspired by a recent trip to an exotic spice market, where I discovered a new ingredient that sparked my creativity in the kitchen. I can’t wait for you to try this unique and delicious dessert!

Ingredients

  • 2 ripe plantains (peeled and sliced)
  • 200ml coconut milk
  • 50g raw honey
  • 1 tsp ground cardamom
  • 50g chopped pistachios
  • 50g toasted coconut flakes

  • saucepan
  • mixing bowl

To begin, preheat your oven to 180°C and line a baking sheet with parchment paper. Spread the sliced plantains on the baking sheet and roast them for 15-20 minutes until they are caramelized and tender. In a blender, combine the roasted plantains, coconut milk, raw honey, and ground cardamom. Blend until smooth and creamy.

Transfer the mixture to a saucepan and heat over low heat, stirring constantly, until it thickens slightly. Remove from heat and let it cool to room temperature. Once cooled, transfer the mixture to a mixing bowl and fold in the chopped pistachios.

Divide the mixture into individual serving bowls and garnish with toasted coconut flakes. Serve chilled and enjoy the unique combination of flavors and textures in this delicious dessert.

The approximate total weight of the cooked dish is 500g, with 4 servings at 125g each. One serving is approximately 250 calories.

One tip to make this dessert even more special is to sprinkle a pinch of sea salt over the top before serving. The hint of salt enhances the sweetness of the plantains and adds a perfect finishing touch to the dish.
