As the summer heat starts to kick in, I find myself craving something refreshing and fruity to cool off. Today, I’m excited to share with you my recipe for a unique and exotic Mango Basil Sorbet. This combination may sound unusual, but trust me, the flavors blend together beautifully to create a deliciously refreshing treat.

I start by gathering my ingredients. For this recipe, you will need:

  • 2 ripe mangoes, peeled and diced (about 600g)
  • 1 cup fresh basil leaves
  • 1/4 cup fresh lime juice
  • 1/2 cup simple syrup
  • 1/4 cup water

In terms of kitchen tools, you will need:

  • blender
  • fine mesh strainer
  • medium saucepan
  • mixing bowl

To start, I combine the diced mangoes, basil leaves, lime juice, simple syrup, and water in a blender. I blend everything together until smooth and well combined. Then, I pour the mixture through a fine mesh strainer into a mixing bowl to remove any fibrous bits from the mango and basil.

Next, I transfer the strained mixture into a medium saucepan and bring it to a simmer over medium heat. I let it simmer for about 5 minutes, stirring occasionally, to enhance the flavors and ensure the mixture is well incorporated.

Once the mixture has simmered, I remove it from the heat and let it cool to room temperature. Then, I transfer it to a shallow container and place it in the freezer. Every hour for the first 3-4 hours, I take it out and stir it to prevent large ice crystals from forming.

After about 4-6 hours of freezing and stirring, the sorbet should be perfectly chilled and ready to serve. Scoop it into bowls or cones, garnish with a fresh basil leaf, and enjoy the exotic flavors of mango and basil in this refreshing sorbet.

The total weight of the cooked sorbet is approximately 800g, and this recipe makes about 4 servings. Each serving weighs around 200g, and one serving is estimated to have around 150 calories.

One unique tip for this recipe is to add a pinch of salt to the mixture before freezing. The salt helps enhance the sweetness of the mango and balances out the flavors perfectly.
