Today, I’m excited to share a delightful dessert that’s perfect for a sunny afternoon treat. This Homemade Berry Meringue Nest is light, fluffy, and bursting with fresh fruit flavors. It’s a lovely way to enjoy the vibrant colors and tastes of summer!

Ingredients:

  • 150g egg whites
  • 300g caster sugar
  • 200g mixed berries (such as strawberries, blueberries, and raspberries)
  • 1 lemon
  • 200ml whipped cream

Kitchen Tools:

  • mixer
  • baking sheet
  • piping bag

To start, preheat your oven to 120°C. In a clean, dry bowl, whisk the egg whites until soft peaks form. Gradually add in the caster sugar, a little at a time, while continuing to whisk until the mixture is thick and glossy.

Using a piping bag, pipe the meringue mixture onto a baking sheet in nest shapes. Create a small well in the center of each nest to hold the fruit. Place the baking sheet in the oven and bake for 1.5 hours, or until the meringues are crisp on the outside.

While the meringues are baking, prepare the berries. Wash and dry the mixed berries, then zest the lemon over the top for an extra burst of freshness.

Once the meringues are done baking and have cooled, fill the center of each nest with a dollop of whipped cream and top with the mixed berries. Serve immediately and enjoy the light and airy combination of meringue, cream, and fruit.
