Zesty Beet and Citrus Salad: A Refreshing Seasonal Delight

Today’s Recipe: Roasted Beet and Grapefruit Salad

As the weather starts to warm up, I find myself craving light and refreshing dishes that showcase the best of seasonal produce. Today, I’m excited to share a recipe for a unique and vibrant Roasted Beet and Grapefruit Salad. This salad is a perfect balance of sweet, tangy, and earthy flavors that will brighten up any meal.

Ingredients:

  • 2 medium beets (about 300g)
  • 1 large grapefruit
  • 1 ripe avocado
  • 2 cups of mixed greens
  • 1/4 cup of walnuts
  • 1/4 cup of crumbled feta cheese
  • 2 tablespoons of balsamic vinegar
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

To start, preheat your oven to 400°F (200°C). Wash and peel the beets, then slice them into thin rounds. Place the beet rounds on a baking sheet lined with aluminum foil, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 30-40 minutes, or until the beets are tender and slightly caramelized.

While the beets are roasting, prepare the grapefruit. Use a sharp knife to remove the peel and pith, then cut the grapefruit into segments. Squeeze any remaining juice from the grapefruit into a mixing bowl and set aside.

Once the beets are done, allow them to cool slightly. In a large bowl, combine the roasted beets, grapefruit segments, mixed greens, diced avocado, walnuts, and crumbled feta cheese. Toss gently to combine.

In the mixing bowl with the grapefruit juice, whisk together balsamic vinegar, olive oil, salt, and pepper to create the dressing. Drizzle the dressing over the salad and toss to coat evenly.

Serve the Roasted Beet and Grapefruit Salad immediately, garnished with a sprinkle of extra feta cheese and walnuts for added crunch.
