Introduction

Today, I’m excited to share a unique dish that combines bold flavors and unexpected textures. This recipe is perfect for those looking to shake up their usual dinner routine and try something completely out of the box.

Ingredients

  • purple sweet potatoes (400g)
  • lamb chops (4 pieces)
  • starfruit (2 pieces)
  • saffron threads (0.5g)
  • cinnamon sticks (2 sticks)
  • coconut milk (200ml)
  • pistachios (50g)
  • maple syrup (50ml)
  • olive oil (2 tbsp)

Preparation

To start, preheat your oven to 200°C. Peel and dice the purple sweet potatoes into small cubes, then toss them with olive oil, salt, and pepper. Roast them in the oven until they are tender and slightly crispy.

While the sweet potatoes are roasting, season the lamb chops with salt, pepper, and a pinch of saffron threads. Heat a skillet over medium-high heat and sear the chops until they are cooked to your desired level of doneness. Remove the chops from the skillet and let them rest.

Next, prepare the starfruit by slicing them into thin rounds. Heat a grill pan over high heat and grill the starfruit slices until they have nice grill marks on both sides.

In a saucepan, combine the coconut milk, cinnamon sticks, and maple syrup. Simmer the mixture over low heat until it thickens slightly. Remove the cinnamon sticks before serving.

Assembly

To plate, place a generous spoonful of the roasted purple sweet potatoes on each plate. Top with a grilled lamb chop and a few slices of grilled starfruit. Drizzle the coconut milk sauce over the dish and finish with a sprinkle of crushed pistachios.

Tips

For an extra flavor boost, try marinating the lamb chops in a mixture of yogurt, garlic, and ginger before cooking. This will add a beautiful depth of flavor to the dish.

Serving

This dish serves 4 people and each serving weighs approximately 300g. One serving contains around 500 calories.
