Ingredients:

  • 200g Arborio rice
  • 250g pumpkin puree
  • 1 liter vegetable broth
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 100g Parmesan cheese, grated
  • 100ml heavy cream
  • 50g butter
  • Fresh sage leaves for garnish
  • Salt and pepper to taste

To start, melt the butter in a large saucepan over medium heat. Add the diced onion and minced garlic, and sauté until they become translucent and fragrant. Stir in the Arborio rice and cook for a few minutes until the grains are well coated with the butter.

Next, add the pumpkin puree to the saucepan and stir to combine with the rice and onion mixture. Gradually add the vegetable broth, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more. This process will take about 20-25 minutes until the rice is cooked al dente and has a creamy consistency.

Once the risotto is cooked to perfection, stir in the heavy cream and grated Parmesan cheese until well combined. Season with salt and pepper to taste. Remove the saucepan from the heat and let it sit for a few minutes to allow the flavors to meld together.

To serve, ladle the creamy pumpkin risotto into bowls and garnish with fresh sage leaves. The aroma of the sage will complement the pumpkin beautifully. Each bite is a perfect balance of creamy, savory, and slightly sweet flavors that will leave you wanting more.
