Preparation

  • purple potatoes (300g)
  • dragonfruit (100g)
  • saffron threads (1g)
  • coconut milk (200ml)
  • lemongrass (2 stalks)
  • shiso leaves (10 leaves)
  • lime (1)
  • chili (1)

  • chef’s knife
  • cutting board
  • potato peeler
  • grater
  • mixing bowl
  • saucepan

To start, peel and cube the purple potatoes before boiling them until tender. Meanwhile, finely chop the dragonfruit and set aside. In a saucepan, heat the coconut milk with saffron threads, lemongrass, and shredded shiso leaves to infuse the flavors.

Once the potatoes are cooked, drain and mash them in a mixing bowl. Gradually add the infused coconut milk mixture, stirring to achieve a creamy consistency. Fold in the chopped dragonfruit and zest the lime over the top for a burst of citrus flavor.

Tips

For an extra kick of heat, add thinly sliced chili to the dish before serving. The contrast of spicy chili with the sweetness of dragonfruit creates a delightful flavor balance that will surprise your taste buds.
