For this recipe, you will need the following ingredients:

  • boneless chicken thighs (400g)
  • arborio rice (300g)
  • bell pepper, diced (1)
  • onion, chopped (1)
  • garlic, minced (3 cloves)
  • cumin (1 tsp)
  • coriander (1 tsp)
  • cinnamon (1/2 tsp)
  • saffron threads (pinch)
  • chicken broth (750ml)
  • olives, pitted (1/2 cup)
  • lemon, sliced (1)
  • parsley, chopped (for garnish)

To make this dish, you will need the following kitchen tools:

  • paella pan
  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

Start by heating a paella pan over medium heat and cooking the chicken thighs until browned on both sides. Remove the chicken from the pan and set it aside. In the same pan, sauté the onion, bell pepper, and garlic until softened.

Add the spices – cumin, coriander, cinnamon, and saffron threads – to the vegetables and stir until fragrant. Next, add the arborio rice and toast it for a few minutes before pouring in the chicken broth. Bring the mixture to a simmer.
