  • 200g canned chickpeas, drained and rinsed
  • 150g fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 2 cloves of garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 200g cooked quinoa
  • Salt and pepper to taste

Make sure you have the following kitchen tools ready:

  • wok
  • chef’s knife
  • cutting board
  • garlic press
  • grater

To start, heat some oil in a wok over medium heat. Add the garlic and ginger, and sauté for a minute until fragrant. Next, add the sliced bell pepper and onion, and cook until they begin to soften.

Add the chickpeas to the wok, along with the soy sauce, sriracha, and rice vinegar. Stir well to coat the chickpeas and vegetables in the sauce. Let everything cook together for a few minutes until the chickpeas are heated through.

Finally, add the pineapple chunks and sesame oil to the wok. Stir everything together and let it cook for another minute or two until the pineapple is heated through. Season with salt and pepper to taste.

Serve the spicy pineapple chickpea stir-fry over cooked quinoa for a complete and satisfying meal.

This dish weighs approximately 700g in total and serves 4. Each serving is about 175g and contains approximately 250 calories.
