Aromatic Herb-Crusted Salmon with Mango Salsa

  • 4 salmon fillets (approx. 150g each)
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh dill, chopped
  • 2 garlic cloves, minced
  • Zest of 1 lemon
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeno, seeded and minced
  • Juice of 1 lime

To start, preheat your oven to 180°C and line a baking sheet with parchment paper. Place the salmon fillets on the prepared baking sheet and spread the herb mixture evenly on top of each fillet.

Bake the salmon in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork. While the salmon is baking, prepare the mango salsa by combining the diced mango, red bell pepper, red onion, jalapeno, and lime juice in a mixing bowl. Season with salt to taste.
