The creamy coconut sauce paired with aromatic curry spices creates a decadent yet wholesome dish that is perfect for a cozy evening at home.

Ingredients:

  • linguine (200g)
  • coconut milk (400ml)
  • curry powder (2 tbsp)
  • bell pepper, thinly sliced (1)
  • red onion, chopped (1)
  • garlic, minced (3 cloves)
  • cherry tomatoes, halved (200g)
  • baby spinach (100g)
  • olive oil (2 tbsp)
  • salt and pepper to taste

To start, cook the linguine according to package instructions until al dente. In a skillet, heat olive oil over medium heat and sauté the red onion and garlic until fragrant. Add the bell pepper and cherry tomatoes, cooking until the vegetables are tender.

Next, pour in the coconut milk and sprinkle in the curry powder, stirring to combine. Allow the sauce to simmer and thicken slightly. Season with salt and pepper to taste.

Once the sauce has reached the desired consistency, add in the cooked linguine and baby spinach, tossing everything together until well coated. Let the pasta simmer for a few more minutes to allow the flavors to meld together.
