I’m excited to share this new recipe with you today that was inspired by my recent trip to the Middle East. The flavors and spices I experienced there left a lasting impression on me, and I wanted to recreate them in a dish that combines both traditional and modern elements.

For this recipe, you will need the following ingredients (all approximate weights):

  • 400g lamb shoulder, cubed
  • 50ml pomegranate molasses
  • 1 tsp cumin
  • 2 tbsp harissa paste
  • 100g dried apricots
  • 200g couscous
  • 400g chickpeas, drained
  • Handful of fresh mint leaves
  • 1 lemon, juiced
  • Salt and pepper, to taste

You will also need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • saucepan

To start, season the lamb shoulder with cumin, salt, and pepper. Heat a large skillet over medium-high heat and sear the lamb until browned on all sides. Add the pomegranate molasses, harissa paste, and dried apricots. Reduce heat to low, cover, and simmer for 1-2 hours until the lamb is tender.

In the meantime, prepare the couscous according to package instructions. Fluff it with a fork and set aside. In a saucepan, heat the chickpeas with a squeeze of lemon juice and season with salt and pepper.

To serve, spoon the lamb over the couscous and chickpeas. Garnish with fresh mint leaves and an extra drizzle of pomegranate molasses. Enjoy this unique fusion dish that combines savory, spicy, and sweet flavors in every bite.

The total weight of the cooked dish is approximately 1200g, with 4 servings. Each serving is around 300g, with an estimated calorie count of 400 per portion.

A clever tip for this recipe is to let the flavors meld together overnight in the fridge. The dish tastes even better the next day as the spices have more time to develop and enhance the overall taste.
