  • fresh blackberries
  • balsamic vinegar
  • honey
  • Dijon mustard
  • salt and pepper
  • olive oil

Start by seasoning the pork chops with salt and pepper on both sides. Heat olive oil in a cast iron skillet over medium-high heat. Sear the pork chops for about 3-4 minutes on each side until they develop a golden crust. Remove the pork chops from the skillet and set aside.

In the same skillet, add blackberries, balsamic vinegar, honey, and Dijon mustard. Cook the mixture for about 5 minutes until the blackberries start to break down and release their juices. Use a blender to puree the blackberry mixture until smooth.

Return the pork chops to the skillet and pour the blackberry glaze over them. Cook for an additional 5-7 minutes, basting the pork chops with the glaze, until they are fully cooked and the glaze has thickened slightly.
