As the warm summer days approach, I find myself yearning for light and refreshing desserts to enjoy after a delicious meal. To satisfy this craving, I decided to experiment in the kitchen and create a unique twist on a classic dessert — Lavender Lemon Creme Brulee. The delicate floral notes of lavender combined with the bright citrusy flavor of lemon make for a perfect summer treat.

Ingredients:

  • 300ml fresh cream
  • 6 egg yolks
  • 100g sugar
  • 1 tablespoon dried edible lavender
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 50g brown sugar (for caramelizing)

To begin, preheat your oven to 325°F (160°C) and place a saucepan over medium heat. In the saucepan, heat the fresh cream until it just begins to simmer. Remove it from the heat and add the dried lavender. Allow the cream to steep for 10-15 minutes to infuse the lavender flavor.

While the cream is infusing, whisk together the egg yolks, sugar, lemon zest, and vanilla extract in a mixing bowl. Once the lavender has infused into the cream, strain it to remove the dried lavender bits. Slowly pour the lavender-infused cream into the egg yolk mixture, whisking continuously.

Place your ramekins in a deep baking dish and fill them with the custard mixture. Create a water bath by pouring hot water into the baking dish until it reaches halfway up the sides of the ramekins. Carefully transfer the baking dish to the preheated oven and bake for 30-35 minutes, or until the edges are set but the center jiggles slightly.

Once the Lavender Lemon Creme Brulee is cooked, remove it from the oven and allow it to cool to room temperature. Transfer the ramekins to the refrigerator and let them chill for at least 2 hours to set.

Just before serving, sprinkle a thin layer of brown sugar on top of each creme brulee. Using a blowtorch, caramelize the sugar until it forms a crispy, caramelized crust. Serve immediately and enjoy the delicate flavors of lavender and lemon in this delicious dessert.
