Hello, foodies! Today, I am excited to share with you a unique dessert recipe that combines the earthy flavors of matcha and the creamy texture of avocado. This Matcha Avocado Tart is perfect for a refreshing treat on a warm summer day or a delicious ending to any meal.

Ingredients:

  • 3 ripe avocados (about 450g)
  • 2 tablespoons matcha powder
  • 1/2 cup coconut milk
  • 1/3 cup maple syrup
  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons fresh lime juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Kitchen Tools:

  • food processor
  • 9-inch tart pan
  • mixing bowl
  • spatula

To start, preheat your oven to 350°F (180°C). In a food processor, combine the almond flour, coconut oil, maple syrup, and a pinch of salt. Pulse until the mixture resembles coarse crumbs. Press the mixture into the bottom of a 9-inch tart pan to form the crust. Bake for 10-12 minutes until lightly golden.

While the crust is baking, prepare the filling. In the same food processor (no need to wash it), combine the avocados, matcha powder, coconut milk, lime juice, vanilla extract, and a pinch of salt. Blend until smooth and creamy. Taste and adjust sweetness if needed by adding more maple syrup.

Once the crust has cooled slightly, pour the avocado matcha filling into the tart shell. Smooth out the top with a spatula. Chill in the refrigerator for at least 2 hours to set.

Tips:

For an extra pop of color and flavor, garnish the tart with fresh berries or edible flowers before serving. The tart can be stored in the refrigerator for up to 3 days, but is best enjoyed fresh.
