Today’s Recipe: Spiced Mango Chicken Curry

Hey there foodies! Today, I’m excited to share with you my unique and flavorful recipe for Spiced Mango Chicken Curry. This dish is perfect for those looking to spice up their weeknight dinner routine with a burst of tropical flavors. Let’s get cooking!

Ingredients:

  • boneless, skinless chicken thighs (500g)
  • ripe mango (1 large)
  • coconut milk (400ml)
  • onion (1, chopped)
  • garlic (3 cloves, minced)
  • ginger (1-inch piece, grated)
  • curry powder (2 tbsp)
  • cumin (1 tsp)
  • ground coriander (1 tsp)
  • chili flakes (1/2 tsp)
  • fresh cilantro (for garnish)
  • salt and pepper (to taste)

Kitchen Tools:

  • knife
  • cutting board
  • large skillet/li>
  • wooden spoon
  • measuring spoons

I start by seasoning the chicken thighs with salt, pepper, and half of the curry powder. In a large skillet over medium heat, I brown the chicken on both sides for about 5 minutes. Then, I remove the chicken from the skillet and set it aside.

In the same skillet, I add the chopped onion, garlic, and grated ginger, cooking until softened. Next, I add the remaining curry powder, cumin, ground coriander, and chili flakes, stirring to combine and release all those aromatic spices.

Once the spices are fragrant, I pour in the coconut milk and diced mango, stirring well to combine. I bring the mixture to a simmer before adding the browned chicken back into the skillet. I cover and let it cook for about 20 minutes, allowing the flavors to meld together.

To finish off the dish, I garnish the Spiced Mango Chicken Curry with fresh cilantro for a burst of herbaceous flavor. The combination of sweet mango, creamy coconut milk, and bold spices creates a truly unique and delicious curry that will have you coming back for seconds.

Approximate total weight of the cooked dish: 1200g
Approximate number of servings: 4
Average weight of one serving: 300g
Approximate calorie count per serving: 350 calories

One clever tip for this recipe is to add a squeeze of lime juice before serving for a refreshing burst of acidity that balances out the richness of the curry.

I hope you give this Spiced Mango Chicken Curry a try and enjoy the fusion of flavors! Feel free to customize it with your favorite vegetables or protein to make it your own. Happy cooking!
