Ingredients:

  • Cashews (150g)
  • Mushrooms, sliced (200g)
  • Pasta of your choice (300g)
  • Garlic, minced (2 cloves)
  • Onion, diced (1 medium)
  • Vegetable broth (500ml)
  • Coconut milk (200ml)
  • Nutritional yeast (2 tbsp)
  • Lemon juice (1 tbsp)
  • Salt and pepper to taste

  • Wooden spoon

Preparation:

Start by soaking the cashews in hot water for about 30 minutes to soften them. In the meantime, cook the pasta according to package instructions until al dente, then set aside.

In a saucepan, sauté the garlic and onion in a bit of olive oil until softened. Add the sliced mushrooms and cook until they release their juices and start to brown.

Once the cashews are softened, drain them and add them to a blender along with the vegetable broth, coconut milk, nutritional yeast, and lemon juice. Blend until smooth and creamy.

Pour the cashew cream sauce into the skillet with the mushrooms and simmer for a few minutes until heated through. Season with salt and pepper to taste.
