I’m excited to share a new vegetarian recipe with you today that is perfect for a cozy night in with a movie. This dish always reminds me of my favorite childhood memories of cooking with my grandmother in the kitchen. The warm and comforting aromas of this dish instantly transport me back to those cherished moments.

  • balsamic vinegar
  • vegetable broth
  • quinoa
  • olive oil
  • salt and pepper

Preparation

I start by peeling and dicing the butternut squash, slicing the cremini mushrooms, and chopping the onion and garlic. In a large skillet, I heat olive oil over medium heat and sauté the onion and garlic until fragrant. Then, I add the butternut squash and mushrooms and cook until they begin to soften.

Next, I pour in the balsamic vinegar and vegetable broth, letting the flavors meld together. In a separate pot, I cook the quinoa according to package instructions. Once the quinoa is ready, I stir it into the skillet with the vegetables, seasoning with salt and pepper to taste.

Clever Cooking Tip

For an extra burst of flavor, try adding a sprinkle of smoked paprika to the dish before serving. It will add a smoky depth that will elevate the flavors to a whole new level.
