Preparation

I start by peeling and dicing the butternut squash, slicing the cremini mushrooms, and chopping the onion and garlic. Next, I pour in the balsamic vinegar and vegetable broth, letting the flavors meld together. In a separate pot, I cook the quinoa according to package instructions. Once the quinoa is ready, I stir it into the skillet with the vegetables, seasoning with salt and pepper to taste.
