Autumn Recipe: Roasted Butternut Squash and Apple Soup

Today, I’m excited to share a cozy and delicious autumn recipe that always brings back memories of cool evenings and falling leaves. This roasted butternut squash and apple soup is the perfect dish to warm you up as the weather begins to change.

For this recipe, you’ll need the following ingredients:

  • 1 medium butternut squash, peeled and cubed
  • 2 apples, peeled, cored, and chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Before we begin, make sure you have the following kitchen tools on hand:

  • baking sheet
  • large pot
  • blender
  • knife
  • spoon

To start, preheat your oven to 400°F. Place the cubed butternut squash, chopped apples, onion, and garlic on a baking sheet. Drizzle with olive oil, sprinkle with cinnamon and nutmeg, and season with salt and pepper. Roast in the oven for 30-40 minutes, or until the vegetables are tender and caramelized.

Once the vegetables are roasted, transfer them to a large pot. Add the vegetable broth and coconut milk. Bring the mixture to a simmer over medium heat, then reduce the heat and let it simmer for 10-15 minutes to allow the flavors to meld together.

Using a blender, carefully puree the soup in batches until smooth. Return the soup to the pot and season with additional salt and pepper if needed. Serve hot, garnished with a drizzle of coconut milk and a sprinkle of cinnamon.

This recipe makes approximately 6 servings, with each serving weighing around 300 grams. One serving of this comforting soup is approximately 200 calories.

A clever tip for this recipe is to add a splash of apple cider vinegar to the soup before serving. The acidity brightens up the flavors and adds a lovely tang to the dish.

I hope you enjoy making and savoring this roasted butternut squash and apple soup as much as I do. Feel free to experiment with different herbs and spices to make it your own. Happy cooking!
