Preparation

For this exotic dish, you’ll need the following ingredients:

  • squid, cleaned and sliced (200g)
  • fennel bulb, thinly sliced (1 small)
  • pomegranate seeds (50g)
  • pistachios, chopped (30g)
  • capers, rinsed (15g)
  • lemon, zest and juice (1)
  • olive oil (30ml)
  • fresh mint leaves, torn (a handful)
  • sea salt and black pepper, to taste

To bring this delightful dish to life, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • mixing bowl
  • skillet
  • zester

Start by heating a skillet over medium-high heat. Toss the sliced squid in olive oil and season with salt and pepper. Sear the squid for 2-3 minutes until golden and slightly caramelized. Remove from the heat and set aside.

In a large mixing bowl, combine the sliced fennel, pomegranate seeds, chopped pistachios, capers, lemon zest, and torn mint leaves. Drizzle with lemon juice and a generous splash of olive oil. Season with salt and pepper and toss to combine.

Tips

For an extra burst of flavor, try grilling the squid instead of sautéing it. The smoky char will add a delicious depth to the dish.
