Ingredients:

  • Arborio rice (300g)
  • Strawberries, diced (200g)
  • Fresh basil leaves, chopped (50g)
  • Shallots, minced (2)
  • Garlic, minced (3 cloves)
  • Dry white wine (120ml)
  • Vegetable broth (1L)
  • Parmesan cheese, grated (50g)
  • Butter (50g)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste

To begin, heat the vegetable broth in a saucepan and keep it warm over low heat. In a separate large saucepan, heat the olive oil over medium heat. Add the minced shallots and garlic, cooking until softened and fragrant. Stir in the Arborio rice and cook for a few minutes until slightly toasted.

Deglaze the pan with the white wine, stirring continuously until the liquid is absorbed. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Fold in the diced strawberries, chopped basil, butter, and grated Parmesan cheese. Season with salt and pepper to taste. Allow the risotto to rest for a few minutes off the heat to meld the flavors together.
