Today’s Special: Exotic Mango Saffron Risotto

Hello, fellow food enthusiasts! Today, I am excited to share with you a unique and flavorful recipe that combines the elegance of Italian risotto with the exotic sweetness of mango and the delicate aroma of saffron. This dish is perfect for a special occasion or when you want to impress your guests with something truly extraordinary.

For this gourmet creation, you will need the following ingredients:

  • 200g Arborio rice
  • 1 ripe mango, diced
  • A pinch of saffron threads
  • 1 liter chicken broth
  • 50g grated Parmesan cheese
  • 50g butter
  • 100ml dry white wine
  • 1 shallot, finely chopped
  • 1 tablespoon fresh thyme leaves

To prepare this exotic mango saffron risotto, you will need the following kitchen tools:

  • saucepan
  • wooden spoon
  • grater
  • knife
  • cutting board

Start by heating the chicken broth in a saucepan over low heat. In another saucepan, melt half of the butter and sauté the shallot until translucent. Add the Arborio rice and toast it for a few minutes until translucent around the edges.

Deglaze the pan with the white wine and allow it to simmer until the liquid has been absorbed. Begin adding the warm chicken broth, one ladle at a time, stirring constantly until each ladle has been absorbed before adding the next.

After about 15 minutes, add the diced mango, saffron threads, and fresh thyme to the risotto. Continue to cook and stir until the rice is creamy and al dente. Remove the risotto from the heat and stir in the grated Parmesan cheese and the remaining butter. Season with salt and black pepper to taste.

Serve the mango saffron risotto hot, garnished with a sprinkle of fresh thyme leaves. This dish weighs approximately 1200g and serves 4 people, with each serving weighing around 300g. Each serving is approximately 400 calories.

A special tip for this recipe is to infuse the saffron threads in a little warm chicken broth before adding them to the risotto. This will help release their flavor and color more effectively, giving your dish a beautiful golden hue and a richer taste.

I hope you enjoy this exotic mango saffron risotto as much as I do. Feel free to experiment with different ingredients and flavors to make it your own. Bon appétit!
