Healthier Dessert: Spiced Carrot Cake Muffins

Today, I’m excited to share a delicious recipe for Spiced Carrot Cake Muffins. As we transition into the fall season, I always crave warm, comforting flavors, and nothing beats the aroma of cinnamon and nutmeg baking in the oven. These muffins are a healthier twist on the classic carrot cake, with a unique combination of ingredients that will surely delight your taste buds.

Ingredients:

  • 200g carrots, grated
  • 150g almond flour
  • 100g oat flour
  • 1 large egg
  • 100g unsweetened applesauce
  • 80g maple syrup
  • 50g coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 50g walnuts, chopped

Kitchen Tools:

  • mixing bowl
  • grater
  • muffin tin
  • muffin liners
  • oven

Start by preheating your oven to 350°F (180°C) and lining a muffin tin with muffin liners. In a mixing bowl, combine the grated carrots, almond flour, oat flour, egg, applesauce, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, baking powder, and salt. Mix until well combined. Fold in the chopped walnuts.

Divide the batter evenly among the muffin liners, filling each about 3/4 full. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. These Spiced Carrot Cake Muffins are delicious served warm or at room temperature. Enjoy as a nutritious snack or a guilt-free dessert.

The total weight of the cooked dish is approximately 700g, with 12 servings. Each serving weighs around 58g, and I estimate each muffin to be around 150 calories.
