Introducing: Curried Chicken Pot Pie

Today I’m excited to share one of my favorite fall comfort food recipes: Curried Chicken Pot Pie. This creamy and flavorful dish is perfect for cozy evenings spent indoors, surrounded by the warm, comforting aroma of spices and buttery pastry.

Ingredients:

  • 400g chicken breast (diced)
  • 200g carrots (sliced)
  • 300g potatoes (diced)
  • 1 large onion (chopped)
  • 2 tbsp curry powder
  • 4 tbsp flour
  • 500ml chicken broth
  • 200ml heavy cream
  • 100g frozen peas
  • 1 sheet puff pastry
  • 1 egg (beaten)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large skillet
  • oven-safe dish
  • rolling pin

To start, preheat your oven to 375°F (190°C). In a large skillet, heat some oil over medium heat and sauté the onion until translucent. Add the diced chicken breast and cook until browned on all sides. Next, sprinkle the flour and curry powder over the chicken mixture and stir until well combined.

Slowly pour in the chicken broth and heavy cream, stirring constantly to prevent lumps from forming. Add the sliced carrots, diced potatoes, and frozen peas. Let everything simmer for about 10-15 minutes until the sauce has thickened and the vegetables are tender.

Transfer the mixture to an oven-safe dish. Roll out the puff pastry sheet on a floured surface and place it over the dish, trimming any excess pastry. Brush the beaten egg over the pastry to create a golden crust.

Bake the pot pie in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown. Serve hot and enjoy the rich, aromatic flavors of the curry-infused filling combined with the buttery, flaky pastry.
