  • chicken breast (500g)
  • blackberries (200g)
  • balsamic vinegar (50ml)
  • honey (30g)
  • garlic (2 cloves)
  • rosemary (10g)
  • olive oil (30ml)
  • salt and pepper to taste

I start by preheating the oven to 375°F (190°C) and preparing the blackberry balsamic glaze. In a saucepan, I combine the blackberries, balsamic vinegar, honey, minced garlic, and rosemary. I let it simmer on low heat for about 10 minutes until the blackberries break down and the mixture thickens. Then, I blend the mixture until smooth and strain it to remove any seeds. This will be the flavorful glaze for the chicken.

Next, I season the chicken breasts with salt and pepper on both sides. In a hot skillet with olive oil, I sear the chicken until golden brown on each side. Then, I transfer the chicken to a baking dish and brush a generous amount of the blackberry balsamic glaze on top.

I bake the chicken in the preheated oven for about 20-25 minutes or until it’s cooked through. The aroma of the blackberries and balsamic vinegar filling the kitchen is simply irresistible.

Once the chicken is cooked, I let it rest for a few minutes before slicing it. I drizzle any remaining glaze on top for an extra burst of flavor. The result is tender, juicy chicken with a beautiful glaze that is both sweet and tangy.
