Today, I am sharing a unique recipe that combines the sweet and tart flavors of blackberries with the savory taste of balsamic vinegar. This dish is perfect for a special dinner or a gathering with friends and family. The rich and complex flavors will surely impress your taste buds.

Ingredients:

  • chicken breast (500g)
  • blackberries (200g)
  • balsamic vinegar (50ml)
  • honey (30g)
  • garlic (2 cloves)
  • rosemary (10g)
  • olive oil (30ml)
  • salt and pepper to taste

I start by preheating the oven to 375°F (190°C) and preparing the blackberry balsamic glaze. In a saucepan, I combine the blackberries, balsamic vinegar, honey, minced garlic, and rosemary. I let it simmer on low heat for about 10 minutes until the blackberries break down and the mixture thickens. Then, I blend the mixture until smooth and strain it to remove any seeds. This will be the flavorful glaze for the chicken.

Next, I season the chicken breasts with salt and pepper on both sides. In a hot skillet with olive oil, I sear the chicken until golden brown on each side. Then, I transfer the chicken to a baking dish and brush a generous amount of the blackberry balsamic glaze on top.

I bake the chicken in the preheated oven for about 20-25 minutes or until it’s cooked through. The aroma of the blackberries and balsamic vinegar filling the kitchen is simply irresistible.

Once the chicken is cooked, I let it rest for a few minutes before slicing it. I drizzle any remaining glaze on top for an extra burst of flavor. The result is tender, juicy chicken with a beautiful glaze that is both sweet and tangy.

The total weight of the cooked dish is approximately 800g, with 4 servings at 200g each. One serving is around 300 calories.

A unique tip for this recipe is to marinate the chicken in some of the blackberry balsamic glaze before cooking. This will infuse the flavors even more deeply into the chicken, creating an even more delicious dish.
