Today’s Special: Spicy Mango Chicken

Hi everyone! Today, I’m excited to share a new recipe I’ve been experimenting with – Spicy Mango Chicken. This dish is perfect for those who love a combination of sweet and spicy flavors, with a tropical twist. It’s great for a summer dinner or anytime you want to spice up your meal!

Ingredients:

  • 500g chicken breast (cut into cubes)
  • 1 ripe mango (peeled and diced)
  • 1 red bell pepper (sliced)
  • 1 onion (chopped)
  • 3 cloves of garlic (minced)
  • 1 red chili pepper (deseeded and chopped)
  • 400ml coconut milk
  • 1 tbsp curry powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

To start, heat olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, sautéing until fragrant. Next, add the chicken cubes and cook until browned on all sides.

Once the chicken is cooked, add the sliced bell pepper, diced mango, and chopped chili pepper to the skillet. Stir in the curry powder, salt, and pepper, coating the ingredients evenly. Let the mixture cook for a few minutes until the peppers soften slightly.

Pour in the coconut milk and bring the mixture to a simmer. Let it simmer on low heat for about 15-20 minutes, allowing the flavors to meld together.

Taste and adjust the seasoning as needed. If you prefer a thicker sauce, you can simmer for a bit longer to reduce the liquid.

Once everything is cooked through and the flavors have developed, remove the skillet from the heat. Serve the Spicy Mango Chicken hot over steamed rice or with naan bread.

This dish yields approximately 4 servings, with each serving weighing around 300g. One serving of this Spicy Mango Chicken is estimated to be around 400 calories.

Clever Tip:

For an extra burst of flavor, try adding a splash of lime juice and a sprinkle of fresh cilantro before serving. It adds a refreshing tangy kick to the dish!
