Ingredients:

  • 250g cream cheese
  • 150g sugar
  • 2 eggs
  • 200g fresh raspberries
  • 10g basil leaves
  • 50g butter
  • 150g digestive biscuits

Start by preheating your oven to 160°C. In a food processor, crush the digestive biscuits until they resemble fine crumbs. Melt the butter and mix it with the biscuit crumbs until well combined. Press this mixture into the bottom of a greased springform pan to create the cheesecake base.

In a mixer, blend the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Pluck the basil leaves from the stems and finely chop them. Fold the chopped basil into the cream cheese mixture, ensuring it is evenly distributed.
