Today’s Special: Spicy Mango Chicken Curry

As we approach the warmer months, I find myself craving dishes with vibrant flavors and a touch of heat. Today, I am excited to share my recipe for Spicy Mango Chicken Curry, a tantalizing blend of sweet, savory, and spicy flavors that will transport your taste buds to tropical paradise.

Ingredients:

  • 400g chicken breast, diced
  • 1 ripe mango, peeled and cubed
  • 400ml coconut milk
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp chili powder
  • 1 tsp turmeric
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh coriander leaves, for garnish

Kitchen Tools:

  • knife
  • cutting board
  • large skillet
  • wooden spoon
  • measuring spoons

To start, heat a large skillet over medium heat and add a splash of oil. Saute the chopped onion, garlic, and grated ginger until fragrant. Add the diced chicken breast and brown on all sides.

Once the chicken is cooked through, sprinkle curry powder, chili powder, turmeric, salt, and pepper over the chicken. Stir well to coat the chicken evenly with the spices.

Pour in the coconut milk and let the curry simmer for 15-20 minutes, allowing the flavors to meld together. Add in the cubed mango pieces and simmer for an additional 5 minutes until the mango is heated through.

Adjust the seasoning to taste, adding more salt or spice if desired. Serve the Spicy Mango Chicken Curry hot over steamed rice, garnished with fresh coriander leaves for a burst of freshness.

Final Details:

Total weight of cooked dish: 1200g

Number of servings: 4

Average weight per serving: 300g

Approximate calorie count per serving: 350 calories

Tip: For an extra kick of heat, add a thinly sliced red chili pepper to the curry while simmering. The contrast of spicy chili and sweet mango creates a harmonious balance of flavors.

I hope you enjoy this unique twist on a classic curry dish. Feel free to experiment with different proteins or additional vegetables to make it your own. Bon appétit!
