Comfort Food Creation: Creamy Mushroom Polenta

Today, I’m excited to share a new creation that combines the rich flavors of mushrooms with the creamy texture of polenta. This dish is perfect for a cozy night in or a dinner party with friends. Let’s get started on this delicious comfort food recipe!

Ingredients:

  • polenta – 200g
  • mixed mushrooms (such as shiitake, oyster, and cremini) – 300g
  • heavy cream – 150ml
  • parmesan cheese – 50g
  • garlic cloves – 3
  • fresh thyme – 1 tablespoon
  • butter – 50g
  • olive oil – 2 tablespoons
  • salt and pepper, to taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • cutting board
  • cheese grater

To begin, heat the olive oil in a saucepan over medium heat. Add the minced garlic and cook until fragrant. Next, add the mixed mushrooms, season with salt and pepper, and cook until they are golden brown and tender.

While the mushrooms are cooking, bring 750ml of water to a boil in a separate saucepan. Slowly pour in the polenta while whisking constantly to avoid any lumps. Reduce the heat to low and continue to cook, stirring occasionally, for about 20 minutes or until the polenta is creamy and thick.

Once the polenta is cooked, stir in the heavy cream, butter, and grated parmesan cheese. Season with salt and pepper to taste. Add the cooked mushrooms and fresh thyme to the polenta, reserving some for garnish.

Serve the creamy mushroom polenta hot, garnished with the remaining mushrooms and thyme. Enjoy this comforting and flavorful dish with a glass of your favorite wine.
