Ingredients:

  • salmon fillets (150g each)
  • pistachios (100g)
  • mango (1, diced)
  • red onion (1/2, finely chopped)
  • jalapeño (1, seeded and minced)
  • lime (1, juiced)
  • cilantro (2 tbsp, chopped)
  • olive oil (2 tbsp)
  • salt and pepper to taste

Start by preheating your oven to 180°C. In a food processor, pulse the pistachios until they are finely chopped but still have some texture. Place the pistachios in a shallow dish. Season the salmon fillets with salt and pepper, then press them into the chopped pistachios, coating both sides.

Place the pistachio-crusted salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown and crispy.
