Decadent Desserts: Lavender Honey Panna Cotta

As we approach the end of summer, I find myself craving a light and floral dessert to enjoy on warm evenings. Today, I am excited to share my recipe for Lavender Honey Panna Cotta. This delicate and creamy dessert is perfect for savoring the last days of summer with its subtle floral notes and silky texture.

Ingredients:

  • 500ml heavy cream
  • 250ml whole milk
  • 10g gelatin powder
  • 100g honey
  • 1 tbsp dried lavender
  • 1 vanilla bean, split and seeds scraped

Kitchen Tools:

  • saucepan
  • whisk
  • fine mesh strainer
  • ramekins

To start, pour the heavy cream and whole milk into a saucepan over medium heat. Add the dried lavender, vanilla bean seeds, and the split vanilla bean pod. Let the mixture simmer for about 10 minutes to infuse the flavors.

In a separate bowl, sprinkle the gelatin powder over 1/4 cup of cold water and let it bloom for 5 minutes. Once bloomed, add the honey to the gelatin mixture and whisk until well combined.

Strain the cream mixture through a fine mesh strainer to remove the lavender and vanilla bean pod. Return the strained mixture to the saucepan and heat it over low heat. Slowly whisk in the gelatin-honey mixture until fully incorporated.

Divide the panna cotta mixture into ramekins and refrigerate for at least 4 hours, or until set.

Before serving, you can top the panna cotta with fresh berries or a drizzle of additional honey for added sweetness.

The approximate weight of the cooked dish is 900g, with 6 servings at 150g each. Each serving is approximately 350 calories.

One tip for this recipe is to bloom the gelatin with cold water to ensure a smooth and creamy texture in the panna cotta. This step helps prevent any lumps or clumps in the final dessert.
