I love experimenting in the kitchen and today I’m excited to share a unique recipe that combines the sweetness of mango with the savory flavors of a classic chicken curry. This Spiced Mango Chicken Curry is perfect for adding a tropical twist to your dinner table. Let’s get started!

Ingredients:

  • 500g chicken breast, diced
  • 2 ripe mangoes, peeled and cubed
  • 400ml coconut milk
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes

  • 2 tbsp olive oil
  • for garnish

Kitchen Tools:

To start, heat olive oil in a large skillet over medium heat. Add diced onion, minced garlic, and grated ginger. Sauté until fragrant, about 2-3 minutes.

Next, add diced chicken breast to the skillet and cook until browned on all sides. Season with curry powder, cumin, coriander, and chili flakes. Stir to coat the chicken evenly with the spices.

Once the chicken is cooked through, add cubed mango to the skillet. Stir in coconut milk and season with salt and pepper to taste. Let the curry simmer for 15-20 minutes, allowing the flavors to meld together.

Serve the Spiced Mango Chicken Curry over steamed rice or with warm naan bread. Garnish with fresh cilantro for a burst of freshness.
