Ingredients:

  • red lentils (200g)
  • pumpkin, diced (300g)
  • coconut milk (400ml)
  • onion, finely chopped (1)
  • garlic, minced (2 cloves)
  • ginger, grated (1-inch piece)
  • curry powder (1 tbsp)
  • ground cumin (1 tsp)
  • ground coriander (1 tsp)
  • vegetable broth (500ml)
  • salt and pepper, to taste
  • fresh cilantro, chopped (for garnish)

  • grater

To start, heat some oil in a large saucepan over medium heat. Add the chopped onion and cook until softened, then stir in the minced garlic and grated ginger. Sprinkle in the curry powder, ground cumin, and coriander, stirring to toast the spices for a minute until fragrant.

Next, add the red lentils, diced pumpkin, coconut milk, and vegetable broth to the saucepan. Season with salt and pepper to taste. Bring the mixture to a gentle simmer, then cover and cook for about 20-25 minutes, stirring occasionally, until the lentils are tender and the pumpkin is cooked through.
