Colorful Spring Market Salad

Today, I’m excited to share a new recipe that was inspired by a recent trip to the farmer’s market. The vibrant colors and fresh scents of the produce there sparked my creativity, leading me to create a dish that celebrates the best of spring.

Ingredients:

  • purple cauliflower (300g)
  • romanescu broccoli (200g)
  • blood oranges (2)
  • candied walnuts (50g)
  • goat cheese (100g)
  • honey (30ml)
  • olive oil (45ml)
  • salt
  • pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • mixing bowl
  • whisk

Preparation:

To start, preheat your oven to 200°C. Wash and trim the purple cauliflower and romanescu broccoli, then cut them into florets. Place the florets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20-25 minutes until tender and slightly caramelized.

While the vegetables are roasting, prepare the dressing. In a small bowl, whisk together the juice of one blood orange, honey, and a pinch of salt. Slowly drizzle in the olive oil while whisking until the dressing emulsifies.

Once the vegetables are done roasting, transfer them to a large mixing bowl. Peel the second blood orange, removing the pith, and cut it into segments. Add the orange segments, candied walnuts, and crumbled goat cheese to the bowl with the vegetables. Pour the dressing over everything and gently toss to combine.

Serving:

Transfer the salad to a serving platter and garnish with additional candied walnuts and crumbled goat cheese. This dish is best served warm, allowing the flavors to meld together beautifully.

Tips:

For an extra burst of citrus flavor, add a sprinkle of blood orange zest over the salad right before serving. The bright, tangy zest will elevate the dish and add a refreshing twist.
